About Wallington
The Wallington vineyard is located at Nyrang Creek Vineyard, Canowindra, New South Wales. It was established in 1992 and is run by Margaret Wallington and her four daughters, after Anthony passed away in 2003. They are makers of carefully crafted wines, made while maintaining principals of organic growing practice.
There are eighteen hectares planted to vine, on brown loam-red clay soils. The grapes have a slow ripening cycle, which helps to strengthen the flavours and deepen the colour. There is hardly any disease to worry about and the harvest time in autumn is usually dry.
Both the vineyard and the olive grove are handled organically and they have a programme in train of converting completely to sustainable farming. Soon they will be a fully organic vineyard and olive growing farm. They have been dedicated to sustainability for many a year, but now they aim to match their beliefs with actions by creating a wholly sustainable, organic business.
They use bore water and catchment water in times of need, but generally the irrigation of the vines is very light. This method of growing is ideal for the production of small grapes with intense flavours.
The picking, crushing and de-stemming of the grapes are all done by hand. For the reds, they use open vat fermentation, with the capping also done by hand. With the whites they ferment them either in oak or stainless steel, then they are basket pressed and transferred to French and American oak to mature.
The winery was fashioned out of a large straw building and completed by 2000. It has excellent insulation because of the straw and the building also serves for wine tastings and dinners. Visitors to the winerycum-Cellar Door are treated to magnificent views of the vineyard and surrounding countryside.
Cabernet Franc, Cabernet Sauvignon, Chardonnay, Grenache, Mataro, Petit Verdot, Pinot Noir, Semillon, Shiraz, Tempranillo and Viognier are available at their Cellar Door, usually on the first weekend of the month. Be sure to phone before going, just to be on the safe side.
