About Salet

The boutique winery known as Salet is located on Peel Street, Currarong, New South Wales, about three hours south of Sydney. They are makers of superb quality wines.

For around twenty-five years the vineyard made wines for personal consumption. Then, in 2002, they decided to dip their toe into commercial pool by offering their boutique wines to the general public.

The proprietor’s forebears came from Europe and were winemakers of some repute. The present-day winemaker learned at the feet of his ancestors and by long, hard study.

They have a policy of keeping to small quantities of wine made. They do this deliberately to ensure that the maximum quality is attained. They use shaved oak hogsheads barrels and age the wine for long periods of time – up to forty-two months in some cases.

This elaborate technique delivers up a unique style of wine similar to the old-style classical Italian Barolo wines. In making these superb wines, they do not use new barrels as there would be too much of an oak constituent in the wine. Their cellar has two-reverse cycle, temperature-controlled units; one is used as an emergency back-up unit.

The Salet Winery use quality grapes from top drawer areas of South Australia, which are delivered to them by refrigerated vehicle. They are very strict about the quality of the grapes they receive and will turn back any that do not come up to their very high standard.

Their aim is to keep operations at the winery on a small scale, in order to maintain their very high standards and to deliver to the public the very best premium wines possible. They also advise that their wines should be open for fairly long periods to ensure the maximum benefit from each bottle.
