About Walla Wines

Walla Wines are to be found on Walla West Road, Walla Walla, New South Wales. It is a small boutique winery with a fine range of table wines and a few selected fortified wines.

The proprietors, Paul, an agriculturalist and teacher, and Chris, a registered nurse, worked in Papua New Guinea, the Northern Territory and at Puckapunyal in Victoria before moving to Walla Walla in 1981. The vineyard began as a hobby for them, but in 1998, they planted the vineyard and built the winery and became a commercial concern.

Paul completed a Graduate Diploma in viticulture at Charles Sturt University at Wagga and has finished several short courses on winemaking at the Dookie campus of Melbourne University. These, together with his agriculture and science qualifications, make him very able to run the vineyard with a high degree of success.

Their table wines include Shiraz, Semillon, Taminga and Tarrango and are all made from their own grapes. In making the wines, they use a mixture of traditional and scientific viticultural techniques, with a policy of minimum intervention. The wines produced are of excellent quality and flavour and would grace any dinner table.

The vineyard uses canopy management to allow the vines to breath and open, which provides for even ripening and disease control. They use mulching between the rows to assist in weed and water management and only organic fertilisers are used for growth. Disease is controlled by fungicides that have been approved by organic registering organisations.

The grapes are lightly pressed, using the traditional basket press. The wines are clarified by racking off with filtering at the bottling stage only. They use a mobile bottling plant for the bottling of their wines. They age the reds in small oak barrels, but the whites are made in stainless steel vats.

Their fortified wines, however, are made at Rutherglen, then aged and blended at the winery.
