About Wild Soul

Wild Soul can be found in south eastern Queensland in the Granite Belt. 

It was started in 1995 by Andy and Beth Bouillier.  Now, it is a 1.3 hectare sustainable vineyard which produces only red wine.  All the grapes are hand planted, tended and picked.  The ‘hands on’ philosophy then continues into the winery, covering all aspects of production, from crushing the grapes to bottling the wines.

In 1995 the Shiraz grapes were field budded, followed by the Cabernet Sauvignon in 1996 and, in 1999 the Merlot.  Picking of the grapes is a family affair, or a family and friends affair, as they arrive early in the morning to pick the grapes whilst they are still cold.  The grapes are then crushed before lunchtime.

A mixture of new and old American oak barrels is used for maturing the wines.  2002 saw the use of the winery’s first French barrel, housing a Cabernet.

None of the wines are filtered and, as a part of the “minimal interference” philosophy of Wild Soul, no fining agents are used either.  Although this can lead to some deposits in the wine, these are easily decanted.

The 2003 vintage was destroyed by bushfires and led to the release of Wild Soul’s wines a year in advance.  Whilst already good to drink, the 2005 vintage would benefit from a little more time.

The wines include: 2004 Shiraz, 2005 Shiraz, 2005 Cabernet Sauvignon and 2005 Merlot.

The cellar is open from 10am to 4pm every weekend and all public holidays although there is an invitation to “just drop in” as Andy and Beth are around most of the time with them living on the premises.
